  • 1-1/2 cups all-purpose flour
  • 1-1/2 cups whole-wheat flour
  • 1-1/2 teaspoon baking soda
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup hass avocado ripe, fresh, halved, seeded, peeled and mashed
  • 1/2 cup unsalted butter softened
  • 2 cups granulated sugar
  • 2/3 cup unsweetened applesauce
  • 5 eggs
  • 1 tablespoon vanilla
  • 8 ounces plain Greek yogurt

  1. Preheat oven to 350 ºF and lightly grease a bundt pan.
  2. Mix together dry ingredients including all-purpose flour, whole-wheat flour, baking soda, baking powder and salt.
  3. Cream together mashed avocado, softened butter and sugar. Then mix in remaining wet ingredients including applesauce, eggs, vanilla and Greek yogurt.
  4. Add dry ingredients to wet ingredients and mix until incorporated, but don't overbeat.
  5. Pour batter in prepared bundt pan and bake at for 40-45 minutes until a toothpick comes out clean.

Chef Notes

Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly.
