Avocado and Cucumber Soup

Decadent avocados combined with cool cucumbers, feta cheese, Greek yogurt and fresh herbs make a refreshing soup for two. Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly.

Ingredients

  • 2 hass avocado ripe and fresh
  • 1 cucumber de-seeded
  • 1/2 cup feta cheese
  • 1 cup Greek yogurt plain
  • 1/4 cup basil (you can also use fresh mint or cilantro)
  • salt and pepper to taste
  • 1 whole wheat pita bread toasted

Directions

  1. Peel and seed avocado, then place avocado fruit in a food processor.
  2. Add cucumber, feta cheese, yogurt and fresh herbs to food processor and blend until mix is smooth like a soup.
  3. Adjust taste with salt and pepper. Place in refrigerator for one hour before serving with toasted pita bread.

Chef Notes

If the soup is too thick, add 1 tablespoon of olive oil and pulse to combine.
