Avocado Chocolate Pudding

Put a twist on traditional chocolate pudding by replacing whole milk and/or heavy cream with avocados.

Ingredients

  • 2 hass avocados ripe, fresh, peeled and seeded
  • 3/4 cup 100% pure maple syrup
  • 1/2 cup plain soy milk (or any milk you like)
  • 1 teaspoon vanilla extract
  • 2 teaspoons balsamic vinegar
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons salt
  • mint for garnish (optional)
  • dark chocolate for garnish (optional)

Directions

  1. Place all ingredients in a food processor and blend until well combined and creamy, about 2-3 minutes.
  2. Divide into 4 ramekins (~1 cup each) and garnish with a sprig of mint and a sprinkle of dark chocolate.
  3. Eat right away or chill before serving.

Chef Notes

Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly.
