Spanish Pea Soup

Ingredients

  • 2 large shallots chopped
  • 3 cloves garlic minced
  • 4 cups veggie or chicken stock
  • 2 1/2 pounds frozen peas
  • 2 avocados chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon smoked paprika
  • 1/2 - 1 teaspoon ground pepper or to taste
  • 1 - 2 teaspoons salt or to taste

Avocado and pea soup is by far one of my favorites. It's creamy, full of flavors and satisfying enough for a main meal.

This soup happened as an accident that has now turned into a household staple. The avocado makes it a velvety and rich soup bursting with flavors and nutrients; it's basically a detox in a bowl.

Getting green soup in your life is definitely the best way to detox your body and throwing in avocado makes everything that much better.

Avocados are full of healthy and beneficial fats that help to keep you full and give you glowing skin. What more could you ask for? This soup is the perfect base soup to start with; you can add your other favorite greens and come up with a new family favorite.

Try adding some greek yogurt or sour cream right before serving with a pinch of sumac or paprika.

Directions

  1. Heat 2 tablespoons olive oil over medium heat in a deep saucepan.
  2. Add shallots and cook until tender and slightly browned about 3 minutes.
  3. Add garlic and cook for 1 more minute.
  4. Add chicken stock, peas, salt, pepper and paprika bringing it to a boil.
  5. Lower the heat to simmer for 5 minutes.
  6. Add chopped avocado and puree soup with an immersion blender until smooth and creamy.
  7. Ladle soup into bowls
