Atole de café is an easy and classic Mexican coffee recipe, also used and enjoyed in other Latin American countries.

  1. In a large bowl, dilute the corn starch with a strainer in 2 cups of milk.
  2. Bring a skillet to medium heat adding the remainig 4 cups of milk, vanilla extract, cinnamon and sugar stirring constantly.
  3. Once boiling, add the ground coffee and cook for 5 minutes. Lower the heat to low. Strain the liquid over a new pot and return to low heat.
  4. Pour the diluted corn starch into the previous mix, constantly moving to avoid sticking.
  5. Cook for 3 more minutes and serve in a coffee mug. Garnish with cinnamon on top.
