  • 6 tablespoons olive oil
  • 3 chicken thighs boneless and skinless
  • 3 chicken drumsticks boneless and skinless
  • ½ cup sofrito
  • 2 packets Sazón Completo
  • 1 cup tomato sauce
  • 1 tomato diced
  • 2 bay leaves
  • 4 cups chicken broth
  • 1/2 cup long-grain rice
  • salt and pepper to taste
  • 1 cup pimento-stuffed green olives
  • 1/4 cup cilantro chopped fresh
  • 1 avocado sliced

Asopao is a hearty stew made with rice, chicken, sofrito seasoning and veggies. Call it a cross between soup and arroz con pollo! It's one of  those foods that instantly reminds Puerto Ricans of home. Moms all over the island have their signature recipes for this comforting dish. It's a staple in the kitchen, whether it's for a family reunion, large gathering or simply a flavorful home-cooked meal.


  1. In a soup pot, heat oil and brown chicken for 4 minutes, Add sofrito, sazón, tomato sauce, diced tomato, bay leaves, and chicken broth. Cook for about 30 minutes then add rice.
  2. When rice is tender (ABOUT 15 MINUTES), add olives and season with salt to taste.
  3. Serve with sliced avocado and cilantro.
