Arroz con fideos

This amps up any protein dish! The fideos add a yummy accent to the rice.

Rice 'n beans might be the quintessential Latin side dish, but arroz con fideos isn't far behind. This dish is enjoyed in many countries in Latin America, although no one really knows its origins. Some say it's a Latin-Lebanese dish. One thing is for sure, though: two carbs taste better than one!


  • 3 tbsp vegetable oil or olive oil
  • 2/3 cup angel hair pasta broken into 1 ½ inch pieces
  • 1 cup white rice long grain
  • 2 cups water or chicken or vegetable stock
  • ½ tsp salt

  1. Heat the oil over medium heat in a saucepan. Add the angel hair pasta and sauté for 3 minutes or until golden.
  2. Add the rice, stir with a wooden spoon for 1 minute. Add the stock (or water), turn the heat to high, add the salt and bring to a boil. Lower the heat to low, cover and cook for 20 minutes or until the rice is tender.
  3. Remove from the heat, rest for 7 minutes, and enjoy!
