Preheat oven to 180.
grease a 20 cm round cake tin.
Cut apples into slices and toss them with the lemon juice setting aside.
Sieve the baking powder and flour into a mixing bowl.
Add Sugar butter eggs and lemon extract to the dry ingredients and beat together until well blended.
pour mixture into your prepared pan and level the top.
Drain lemon juice from apples and place the slices on top of batter.
Pop in oven for 30 -40 min (when you press on the cake and it springs back it is ready)
Take out and let cool.
*you can switch the lemon extract for vanilla also
