Apple Sponge Cake

Apple sponge cake is your afternoon tea or coffees best mate, sprinkle with a little icing sugar and a side of whipped cream .

Im not a great baker as I struggle with following instructions so I promise this is a simple as it comes for a great tasting cake .

A few things you can add to this sponge cake is dried cranberries or raisins mixed together with the batter before baking, or switch the apples for pears.

Great the next day if it manages to last that long or school lunches.




  1. Preheat oven to 180. grease a 20 cm round cake tin. Cut apples into slices and toss them with the lemon juice setting aside. Sieve the baking powder and flour into a mixing bowl. Add Sugar butter eggs and lemon extract to the dry ingredients and beat together until well blended. pour mixture into your prepared pan and level the top. Drain lemon juice from apples and place the slices on top of batter. Pop in oven for 30 -40 min (when you press on the cake and it springs back it is ready) Take out and let cool.

Chef Notes

*you can switch the lemon extract for vanilla also
