Who doesn't love sponge cake? And who doesn't love apple pie? Well, this recipe combines the best of both! It's inspired by the tarta de manzana that's so popular in Spain.  This cake is light, tasty and is the perfect afternoon snack to enjoy with a cup of coffee or tea! If you don't have apples handy or want to try a variation, you can easily turn this into a pear sponge cake. Just swap the apples for pears and keep everything else as is. It's that easy!

This is my go-to recipe if I have people stopping by. Not only does it taste great, but the aroma it gives the house makes it mouthwatering!

Ingredients

  • 2 apples
  • 1 lemon juiced
  • 1 tablespoon baking powder
  • 4 ounces self rising flour
  • 1 tablespoon cinnamon optional
  • 4 ounces sugar
  • 4 ounces butter
  • 2 eggs
  • 1 tablespoon lemon extract

Directions

  1. Preheat oven to 350º F. Preheat oven to 350º F.
  2. Grease an 8-inch round cake tin.
  3. Slice the apples and toss them with the lemon juice. Set aside.
  4. Sieve the baking powder, flour and cinnamon into a mixing bowl. Add the sugar, butter, eggs and lemon extract to the dry ingredients and beat together until well blended.
  5. Pour the mixture into your prepared pan and level the top.
  6. Drain the lemon juice from the apples and layer the slices on top of the batter.
  7. Pop in the oven for 30-40 minutes (when you press on the cake and it springs back, it's ready!). Take out and let cool before serving.

Chef Notes

You can switch the lemon extract for vanilla.
