Apple Brie Quesadillas

Quesadillas are a fast, no-frills, homemade dish. This recipe adds unique flavors to the typical recipe with the addition of apple, brie, honey and bacon!

Quesadillas are a staple hispanic kitchen dish that I love to make for dinner when I'm short on time. These apple brie quesadillas may require about 3 extra minutes than your regular go-to's, but they are sure to get you into the autumn mood. It may sound like we went rogue with some of the ingredients, but trust us, this combination is perfect.


  • 1 green apple thinly sliced
  • 4 corn tortillas
  • 8 oz. brie cheese sliced (without the rind)
  • 1 1/2 tbsp whole-grain mustard
  • 1 tbsp honey
  • 3 strips bacon cooked, crushed
  • 4 tsps olive oil

  1. Preheat a cooking pan over medium-high heat. Cook the sliced apple with a dash of olive oil, until golden, for 3 minutes. Reserve.
  2. Assemble each tortilla with 3 strips of the apple and 1 tablespoon of brie, then fold the tortillas in half.
  3. In a large nonstick skillet, heat the olive oil over medium heat.
  4. Cook the quesadillas until golden brown, about 2 minutes per side. Once done, slice them into four wedges. Mix the mustard and honey in a bowl.
  5. Top the quesadilla wedges with the honey mustard, and garnish with the bacon bits.
