  1. Bring a large pot of water to a boil with a pinch of salt.
  2. In a large saucepan, melt the butter over low heat and add the chopped shallots. Once the shallot changes color, add the mussels, white wine and chipotle. Cover and simmer over low heat until the mussels open.
  3. Once they are all open, take them out and reserve.
  4. Cook the pasta according to the package directions.
  5. While the pasta is fully cooked, go back to the saucepan with the remaining broth and add the half and half cream, incorporating with the help of a whisk until it thickens.
  6. Once the pasta is drained, mix and check the spice level; you can always add more chipotle if you desire more heat.
  7. Take the mussels out of their shell and incorporate them into the pasta once it's removed from the flame.
  8. Serve in a bowl and top with parmesan cheese.

Chef Notes

Discard any mussels that don’t open up while cooking because they might not be fresh.
