Roasted whole carrots are not only a really beautiful side dish, flavorful and with the added honey and spice you will not be disappointed.
The days of our mother's and grandmother's boiled carrots are well over, my friends. These babies are absolutely full of flavor and still slightly crunchy.

Ingredients
- 1 bunch carrots long and skinny
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon chili powder or to taste
- 1 teaspoon salt
- 1 tablespoon honey runny

Directions
- Preheat oven to 375ºF.
- In a small bowl combine olive oil, chili powder, salt and honey.
- Pour this mixture over carrots in baking pan to coat.
- Roast carrots for 20 minutes, turn over and roast for another 20 minutes until they are slightly caramelized (time may vary depending on size of carrots).
Chef Notes
If the carrots are very thick (big around), cut them in half lengthwise.
