Ok, are you ready for this? It's a fruit gazpacho…. and it's amazing !
This recipe was literally made by accident when i was making a morning smoothie with a few fresh fruits and vegetables, and i dropped and smashed my blender glass to pieces. I had no choice but to use my food processor... and when I went to taste it, I couldn't believe the texture was identical to my gazpacho recipe ! That's when fruit gazpacho was created in my casa. ❤️
Fruit gazpacho is an amazingly fresh and possibly the best brunch soup EVER! I am totally going to try this with strawberries and tomatoes next time because the sky the limit with this little gem! This recipe is so full of flavors, textures, nutrients and goodness that it is an absolute must try !
As we all know, green smoothies & shakes are amazing for our bodies in so many ways. It’s the same with this gazpacho, which can also be served as a green drink if put in a blender and blasted.
I've added the green powder in the ingredients but it is totally optional. I highly recommend greens or chlorophyll supplements if access to organic green vegetables is limited.
Enjoy!
Ingredients
- 1 tsp turmeric
- 1 tbs ground flax seeds
- 1 tbs green powder or chlorophyll (optional)
- 1 cup melon
- 1 cup mango
- 1 cup pineapple chunks
- 1 lemon juiced
- 1 cucumber (roughly peeled)
- 3 oranges juiced
- 2 cups spinach
Directions
- Put all the ingredients in a food processor and blast for a minute on high. Then use the pulse setting to get it to the smoothness you like.
- Top off with chopped pineapple.
Chef Notes
Chilling the fruit and veggies in the fridge for an hour before making the gazpacho is a great trick when making cold soup .
