  • 1 pound ground beef
  • 1 small onion chopped
  • 1 bunch parsley finely chopped
  • 1 tsp ground cumin
  • 1/2 cup walnuts finely chopped
  • salt and pepper to taste
  • 2 eggs beaten
  • 16 Sunsweet Amaz!n prunes
  • For the Sauce
  • ¼ cup vegetable oil
  • 2 cups Sunsweet Amaz!n diced prunes
  • 2 cloves garlic minced
  • 2 cups tomato puree
  • 2 cups broths
  • 1 cup dry red wine
  • salt to taste

Directions

For the Meatballs
  1. Combine the beef together with the onion, parsley, cumin, walnuts, eggs, salt and pepper.
  2. Shape the mixture into small balls and place a Sunsweet Amaz!n prune right in the middle.
  3. Transfer to a plate and refrigerate for one hour to firm up.
  4. Serve and sprinkle with fresh parsley.
For the Sauce
  1. In a wide saucepan, heat the oil over medium heat. Add the garlic and Sunsweet Amaz!n diced prunes. Stir for 3 minutes.
  2. Add the tomato, wine, beef broth, and salt to taste. Bring to a boil and lower the heat.
  3. Add the meatballs and simmer gently for 20 minutes, until the sauce thickens.
  4. Serve with a sprinkling of fresh parsley.
