Agua de Espinacas (“Spinach Water”)

Aguas frescas are a traditional Mexican beverage made from either fresh fruit or dried grains like rice, oats and barley. But did you know that aguas frescas can also be made with fresh greens like alfalfa, spinach, and kale? The most popular being alfalfa and spinach. I love using fresh spinach because I’m always looking for ways to add this healthy green—rich in vitamins and minerals—to our diet. Fresh lime juice adds an added level of flavor and a refreshing tartness to this unique agua fresca.

Directions

  1. Puree the baby spinach leaves with 4 cups of the water in a blender until smooth. Strain puree into a 2-quart pitcher. Stir in the fresh lime juice and remaining 2 cups of water. Sweeten with granulated sugar to taste. Serve agua fresca over ice and garnish with lime wedges. Enjoy!
