Yields 3 to 4 servings
1 cup chopped mango
3 tablespoons cane sugar
1 pint heavy whipping cream
1 teaspoon vanilla extract
1. Using a blender, mix the mango, sugar and vanilla extract until a purée is created.
2. Add the heavy whipping cream and mix well.
3. Pour into large ceramic or glass bowl and let chill for at least a half-hour.
4. Serve in dessert bowls and enjoy.
Note: You can also make a sorbet from the mousse by chilling in the freezer for about an hour. Make sure it does not freeze solid, just that it thickens.
