Dulce de Leche Cortada (Sweet Caramel Milk Curds)


Yields 6 servings



8 cups milk
1 lb. sugar
4 egg yolks
juice and zest of ½ lime
1 cinnamon stick
3 drops vanilla extract
1 pinch salt


Mix together the milk and sugar, and then add the yolks and the lime juice. Stir well to combine, and strain the mixture using a fine-mesh sieve. Add the lime zest, cinnamon, vanilla, and salt. Allow the mixture to stand for 30 minutes.

Heat the mixture in a large pot over high heat until it comes to a boil. Reduce the heat to medium and cook, stirring occasionally, until the mixture thickens and takes on a golden brown color. Serve cold.
