Grilled fruit, such as peaches, mangoes, and pineapple are great to add to your favorite guacamole recipe! It adds a hint of sweet and tart flavors to the bowl. I look forward to this summer when the fruits are in season and perfectly ripe. Enjoy the fruits that are in season and grilling them brings out their sweetness!
6 ripe peaches (about 3 cups)
1 large ripe avocado
½ of a medium red onion, sliced into thin strips
2 serrano peppers
small handful chopped cilantro
Juice of 1 small lime
1 tablespoon honey
1 teaspoon of chile limon powder
Salt and pepper
Note: If you cannot find chile limon powder, you can add just a pinch of Cayenne pepper or crushed red pepper.
1. Wash the peaches, then peel. Cut them into ½-inch wedges, removing the pits. Transfer to a bowl, along with the red onions and serrano peppers, drizzle with olive oil and season lightly with salt and pepper, stir gently. Heat a stove-top grill pan to medium heat and line with easy release foil paper.
2. When grill is hot, transfer peaches, onions and serranos to grill. Using tongs, spread them out so you get some nice grill marks on the peaches. Turn as needed and cook for about 15 minutes. Remove from heat and let cool. When cooled, transfer to bowl, cut and dice the avocado, add to peaches along with cilantro, lime juice, honey, salt and pepper. Serve right away or cover with plastic wrap directly onto guacamole and keep chilled until ready to serve.
