Cangrejitos de Jamón (Ham-Filled Crab-Shaped Pastries)

Makes 24 units





For the dough:
1 cup + 2 tablespoons margarine, softened
1 cup cream cheese, softened
2 tablespoons sugar
½ teaspoon salt
5 cups flour


For the ham filling:
½ lb ham, finely chopped
1 tablespoon Worcestershire sauce
3 tablespoons mayonnaise
1 cup finely grated cheese


For the egg wash:
1 egg yolk mixed with 1 teaspoon water


For the dough:
In the bowl of a stand mixer, briefly beat together the margarine, cream cheese, sugar and salt. Add the flour and beat until the dough forms a ball. Divide the dough into 3 disks. Wrap in plastic wrap and refrigerate for 1 hour.


For the filling:
Combine all of the filling ingredients in a large bowl. Refrigerate until ready to use.


For the assembly:
On lightly floured wax paper, roll out each disk of dough to a diameter of about 14 inches. Cut into 8 triangles.


Place 1 teaspoon of filling on each triangle of dough. Beginning with the short side, roll up the triangle toward the tip. Shape the dough into crescents and make sure to tuck the tip underneath. Place on a baking sheet and brush with egg wash. Bake in a preheated 350ºF oven for 35 minutes. Remove to a wire rack to cool.


Serve hot. Store in plastic containers in the refrigerator.
