Pomegranate and guacamole?? Yes!! This is one of those combinations that really works well together. You have the creamy, spicy guacamole, then you get that crisp, sweet, tart bite from the pomegranate. It’s delicious and a fun way to enjoy all on its own. This guacamole is prepared a lot during the holidays because of the bright red and green colors. I like to enjoy it whenever pomegranates are available.
2 ripe avocados, mashed smooth or left chunky (your preference)
1 serrano pepper, minced
1 clove of garlic, minced
4 green onions, thinly sliced
1/4 cup chopped cilantro
Juice of 1/2 a lemon
1/2 cup of fresh pomegranate seeds
Salt to taste
Fresh cracked pepper
Combine all of the ingredients, minus the pomegranate, in a medium bowl. Taste for salt. If you are going to serve right away, spread the pomegranate evenly over the guacamole, serve with chips or tostadas.
If making the guacamole a couple of hours ahead, when guacamole is made, cover the top, pressing down gently, with plastic wrap. Store in the refrigerator, add the pomegranate right before serving.
