Carne Asada

Prep time 30 min.

Cooking time 1- 1 1/2 hrs.

 

Serves 8

 

2 lb beef stew meat

5 cloves garlic, minced

1 large sweet onion, minced

2 tbsp cumin

2 tbsp black pepper

1 large can tomato sauce

3 tbsp beef boullion granules

3 tbsp flour

water

lard

 

Melt enough lard to cover bottom of pot. I have tried this with vegetable or canola oil and it severly changes the flavor, use the lard. A little goes a long way. Trim the stew meat of gristle. Brown the meat, garlic and onion together. Take your time as the browning is what give this good flavor. Add water to cover. Stir in cumin, pepper, tomato sauce, and boullion. Bring to a boil, reduce to a simmer and cover. Cook for 1 to 1 1/2 hrs or until meat is falling apart tender. Stir flour into cold water then add to pot. Simmer with lid off until it thickens. Serve on tortillas or tacos shells. Good served with rice and refried beans.
