Palanquetas de Cacahuate (Peanut Palanquetas)

Yields 12 pieces


¼ cup of honey
1 pinch sea salt
1 tbsp unsalted butter
2 tsps water
1 tsp vanilla extract
1 cup unsalted roasted peanuts, shelled
¼ cup toasted pumpkin seeds
1 tsp toasted sesame seeds
1 cup sugar



1. Place the honey, salt, butter, sugar and water in a small pot and heat to a boil. 
2. Add the peanuts, pumpkin seeds and sesame seeds. 
3. Cook on medium heat until the honey mixture turns a dark amber color. Add the vanilla extract and mix well. 
4. Empty the mixture on a slightly greasened 12-unit baking mold and wait for the palanquetas to reach room temperature. You can also pour the mixture on a 10″ x 15″ baking tray, let the palanquetas cool to room temperature and cut into 12 pieces.
