I hate being sick, plus it makes me miss my grandmother more than usual. When I was younger grandma was always there to take care of me when I was sick, making me endless pots of “te de tilo” (tea made from tilia flowers) and a chicken soup that could heal anything and anyone… So today I have decided to make some chicken noodle soup to remember my grandma and all her loving care. There, that should make me feel better! This recipe is going to be of the “flexible” kind, here’s a list of ingredients but basically just work with what you have at home.

1 small onion, peeled
1 stick of celery
1 tomato
Half a red pepper
3 cloves of garlic, peeled
Chicken breast -1 large or 2 small
2 carrots, peeled and diced (bite-size pieces)
1 small yam, peeled and diced (bite-size pieces)
1 potato, peeled and diced (bite-size pieces)
Fresh mint (a sprig or two)
Fresh cilantro (a sprig or two)
Sea salt and freshly ground pepper to taste

Place enough water (at least 8 cups) in a large pot over medium-high heat. Add the onion, celery, tomato, red pepper and garlic (add all of these ingredients whole, no need to chop or dice since you’ll be discarding them later). Bring to a boil, then add the chicken and bring the temperature down to a simmer. Let it simmer for about 20 minutes, then add the rest of the vegetables (carrots, yams, potatoes, etc.) and let it simmer for another 15 to 20 minutes. Take the onion, celery, tomato, red pepper and garlic out of the soup and discard. Shred or dice the chicken to bite size pieces. Add the noodles, mint, and cilantro, salt and pepper to taste. Once the noodles are cooked, turn the heat off and enjoy a wonderful chicken soup for the soul, the body, the spirit and the mind!
