Who needs to go to the restaurant for calamari this good? This recipe from Cielito Rosado taps that powerful spice saffron for a delicious, quick entree.
Yields 4 servings
2 lbs. calamari rings
¼ cup olive oil
½ stick of butter
1 cup chopped onion
¼ cup chopped green bell pepper,
¼ cup chopped red bell pepper
1 packet of saffron
½ cup white wine
Salt to taste
¼ cup chopped cilantro or chopped parsley
1. In a pan, heat the olive oil and butter. Put the onion and peppers and cook for several minutes.
2. Add the squid and saute for 5 to 6 minutes. Add the saffron and wine.
3. Cook for several minutes until the sauce is reduced and serve.
