As a side dish, the fragrant arroz verde makes a nice substitute for plain rice or rice and beans. This recipe from Cielito Rosado works especially well now that days are growing warmer. It pairs well with chicken and fish. On behalf of Cielito, enjoy!
Yields 4-6 servings
¼ cup olive oil
2 tablespoons butter
1 cup onion, finely chopped
1 cup of ham
1 teaspoon garlic, mashed
2 cups chicken stock
2 cups long-grain rice
1 bunch parsley or cilantro, finely chopped
Grated Parmesan cheese
1. In a saucepan, put the olive oil and butter. Heat pan, then put the onion and garlic and cook 2-3 minutes.
2. Add the chicken stock and rice and cook 20-25 minutes.
3. Add the herbs and grated Parmesan cheese.
If making stock is not your cup of tea, try using ready-to-use chicken stock from your grocer.
