Ingredients
  • 4 eggs
  • 1large potatochopped into bite-size pieces
  • 1cup sweet corn
  • 1medium oniondiced
  • 1/2cup cream
  • 1/2cup olivessliced
  • 1 - 2tablespoons jalapeñosdiced
  • 1/2teaspoon cayenne pepper
  • 1tablespoon paprika
  • 1pinch saltor to taste
  • 1 1/2cups sharp cheddar cheese
  • 3tablespoons olive oil
  • 1 pie crust
Instructions
  1. Pre heat oven to 350 F.
  2. In a skillet on medium high heat, place oil, potatoes and onions and cook until potatoes are tender. Add the corn and cook for 3 more minutes.
  3. Remove from heat; add the olives and jalapeños, mixing together, and set aside.
  4. In a bowl whisk eggs, cream and spices together.
  5. Place the potato, onion, corn, olives and jalapeños mixture in the pie crust.
  6. Sprinkle half of the cheese on top of the mixture.
  7. Pour the eggs on top.
  8. Pop it in the oven for 20 minutes.
  9. Add cheese to the top and bake for 20 more minutes.
