  • 1 pound cherry tomatoes
  • 2 medium red peppers chopped into bite-size pieces
  • 4 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon rock salt
  • 3 cloves garlic minced
  • 1 large onion chopped into bite-size pieces

Summer is well upon us and sizzling up some veggies on the BBQ grill is definitely a YES in my house. I am surrounded by vegetarians so coming up with BBQ ideas that are tasty has become a game around here, and this recipe is definitely a winner!

If you have ever grown cherry tomato plants, you will know they go crazy when they get some good heat and humidity.

This is whats happened at my casa! We are in the middle of a heat wave in Spain and these babies are producing like mad. They are seriously divine and eating them warm off the vine is pretty much heaven in your mouth.

Cherry tomatoes and red pepper skewers served with some fresh crusty bread make for an easy, delicious and perfect afternoon snack.

These skewers can be made with different colored cherry tomatoes, peppers and whole garlic cloves, so play around with different veggie combos and enjoy !

*If you are using bamboo skewers remember to fully immerse them in water for 1 hour.

 

Directions

  1. Combine oil, balsamic and garlic together and set aside. Remove the stems from the cherry tomatoes. Combine oil, balsamic and garlic together and set aside. Remove the stems from the cherry tomatoes.
  2. Add cherry tomatoes and red peppers to marinade and toss to coat.
  3. Skewer tomatoes and peppers on the skewers and sprinkle with salt and pepper to taste.
  4. Heat your grill to a medium/high heat.
  5. Grill skewers on each side for about 5 minutes.
  6. Cooking time will vary depending on your grill.
