Ingredients
  • 3cups mangochopped
  • 2cups orange juicefresh squeezed
  • 1large cucumberchopped, seeded and peeled
  • 1small Spanish onionchopped
  • 1-2cloves garlicdiced
  • 4tablespoons fresh lime juice
  • 2tablespoons extra-virgin olive oil
  • 1handful cilantroor basil if not a cilantro fan
  • 1small red pepperseeded and chopped
  • 1small jalapeƱoseeded and diced
Instructions
  1. In a processor, add mangoes, orange juice and oil, and blast until pureed.
  2. Leaving out the cilantro, add the remaining ingredients and blend until achieving a consistency that you like.
  3. Refrigerate for 1 hour.
  4. Sprinkle the basil or cilantro over the gazpacho just before serving.
Recipe Notes

If you end up with a bunch of mangoes they freeze really, really well, and make the best snacks!

  1. Cut mangos into cubes
  2. Arrange on a baking sheet (small enough to fit in freezer) so they are not touching
  3. Cover and pop in freezer until completely frozen
  4. Pop a handful into individual freezer bags
