Ingredients
  • 1tablespoon olive oilgood quality
  • 1bulb garlicpeeled and chopped
  • 2tablespoons sweet paprika
  • 1tablespoon Hot paprika
  • 5cups spinachchopped
  • 1/2cup water
  • 4cups chickpeas
  • 1teaspoon cumin
  • 1pinch salt
  • 1 tablespoon wine vinagar
Instructions
  1. In a skillet, heat oil and add chopped garlic.
  2. Cook on medium heat until golden.
  3. Add paprika, cumin and chopped spinach; mix well.
  4. Add another tablespoon of oil and stir until cooked (about 5 minutes).
  5. Add a pinch of salt.
  6. Add chickpeas and mix everything together. Drizzle the vinegar in, mixing well.
  7. Cook for about 5 more minutes.
Recipe Notes

*You can save a handful of uncooked spinach and add it to the finished product for a bit of color.
