Dulce de Coco
- 2 cups coconuts shredded
- 2 cups coconut milk or 1½ cups regular milk
- 1½ cups sugar
- 3 sticks cinnamon
- 1 teaspoon vanilla extract
- 1 egg yolk
I love desserts made with coconut, and this dulce de coco recipe requires just a few ingredients and it's super easy to prepare. The end result is a tropical sweet treat you'll never forget. You can prepare it with fresh coconut or with the already shredded coconut sold at most grocery stores. Obviously, the fresh coconut will give you a different, better taste in my opinion, but they're both delicious.
Some prefer the coconut shredded in thicker pieces, others prefer to make this dish with coconut that is shredded so thin it's almost like a powder. If you prefer the latter, use a food processor to process your coconut before preparing.
