Chorizo Jalapeño Grilled Cheese Sandwich

Ingredients

  • cups Oaxaca or mozzarella cheese shredded
  • cups Pepper jack cheese shredded
  • cups white sharp cheddar shredded
  • 12 pre-sliced Italian-style bread
  • 6 tablespoons Mayonnaise
  • 9 ounces pork Mexican chorizo previously cooked
  • 1/3 cup pickled jalapeño thinly sliced into strips

What comes to mind when you think of a grilled cheese sandwich? Melted cheese? This chorizo jalapeño grilled cheese sandwich will not disappoint! Grilled cheese is much like a taco or quesadilla. Anything goes when we are talking about fillings for these tasty sandwiches. I am keeping it simple with two of my favorites. Mexican chorizo and jalapeños en escabeche (pickled jalapeños) are perfect together. It was just like enjoying another of my favorites. Keep it simple or add your favorite fillings.

Directions

  1. Preheat large cast-iron pan or griddle pan to medium/low heat for 5 minutes.
  2. In a bowl, combine the three cheese varieties and toss to mix.
  3. Spread about 1/2 tablespoon of mayonnaise onto one side of each bread slice.
  4. Place 6 of the slices, mayonnaise side down, onto hot surface. To each one, add about 1/2 cup of cheese, 2 tablespoons of chorizo, a couple slices of jalapeño and then another 1/4 cup of cheese. Top each one with remaining slices of bread, mayonnaise side up.
  5. Cook for a few minutes, pressing gently with a spatula. If you can cover the sandwiches with a lid, this will help create steam so the cheese will melt quicker. Once browned and crispy, flip over and cook for 2-4 minutes. Remove from heat and let sit for a few minutes before enjoying.Cook for a few minutes, pressing gently with a spatula. Plan ahead for the best grilled cheese sandwich night. Grill, saute or roast your favorites, like sweet onions, mushrooms, and peppers (both sweet and spicy), to host the most tasty grilled cheese sandwich. Don't forget to include your favorite cooked meats, like carne asada, grilled chicken, chorizo or smoky ham. Thick sliced artisan breads work well for grilled cheese sandwiches.
