  • 3 cups milk
  • 6 eggs
  • 6 tsp cilantro fresh
  • 3 fist scallions
  • 4 slices bread toasted, cut into cubes
  • salt to taste

This egg and milk-based breakfast soup is a great way to start the day with feel-good comfort food.

Can you imagine having a soup for breakfast? Well, Colombians do so a lot and it's delicious. Changua is an egg and milk based soup you will adore. Believe me when I tell you that this could be your next favorite first meal of the day! It's hearty and when made right, is a great way to start the day.

Directions

  1. Chop scallions and cilantro into small pieces.
  2. In a stockpot, add water, milk and salt. Bring to a boil, and crack the eggs adding them carefully, without breaking the yolk.
  3. Cover the pot and let it boil for one more minute.
  4. Place one teaspoon of scallions and coriander at the bottom of each soup dish and, from the pot, carefully place one cooked egg. Then lastly, add the boiling broth.
  5. Serve the soup with bread and enjoy!
