Carrot and Onion White Rice

  • 4 cups white rice
  • 7 cups water
  • 3 large onions
  • 3 large carrots
  • 4 tbsp vegetable oil or olive oil
  • salt to taste
  • pepper to taste
  • 2 tbsp sesame seeds (optional)

Upgrade your every day rice dish with some carrots and onions! So simple, so delicious.

In our opinion, there can never be enough rice on the table. It's incredible - rice is always, oh so delicious and fluffy; either plain, with fideos, or with carrots as is the case in this carrot and onion white rice recipe. It is difficult to go wrong with this grain.

We recommend you rinse your rice overnight before preparing this meal. Why? So you don't get a sticky clump of mush, and instead, serve a deliciously cooked rice dish. It's easy - pour your uncooked rice in a bowl, fill it with water, stir and leave overnight. The cloudy film left over on top of the water is the starch - which is what makes your rice too sticky. Strain. Repeat until the water runs clear the next morning.

Now you're ready to enter rice heaven.

Directions

  1. In a deep saucepan, pour water and salt and place over medium-low heat.
  2. Chop onions, grade carrots. Place them on a large frying pan with oil, cook them over medium heat until they are soft. Add a dash of salt and pepper.
  3. Add rice to the onions and carrots. If you want, add sesame seeds (they're good for you!)
  4. Finally, place rice and veggie mix in water. Set heat to medium-high until it comes to a boil. Lower heat to medium-low. Cover and cook until water has been absorbed by the rice, for approximately 15 minutes.
