Ingredients
  • 1 fresh Hass avocadoripe, halved, pitted, peeled and cubed
  • 2 chicken breasts
  • 2cups tomato sauce
  • 2cups chicken broth
  • 1cup canned black beans
  • 1/4teaspoon chili powder
  • cilantro
Instructions
  1. In a large saucepot combine chicken, tomato sauce, chicken broth, beans and chili powder. Simmer over medium heat until hot, about 5 minutes.
  2. Stir in half of the avocado and any leftover rice.
  3. Divide soup among four bowls.
  4. Top with remaining cubed avocado and chopped fresh cilantro.
