Ingredients

  • 1 fresh Hass avocado ripe, halved, pitted, peeled and cubed
  • 2 chicken breasts
  • 2 cups tomato sauce
  • 2 cups chicken broth
  • 1 cup canned black beans
  • 1/4 teaspoon chili powder
  • cilantro
Difficulty:
Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly

Two dinners in one. Use Skillet Chicken with Avocado to create this delicious avocado soup.

Directions

  1. In a large saucepot combine chicken, tomato sauce, chicken broth, beans and chili powder. Simmer over medium heat until hot, about 5 minutes.
  2. Stir in half of the avocado and any leftover rice.
  3. Divide soup among four bowls.
  4. Top with remaining cubed avocado and chopped fresh cilantro.
