2-3hot peppersfinely chopped (habaneros or jalapeños work really well)
2green onionschopped (stalks only)
4tablespoons chopped cilantro
1seedless Roma tomato(chopped)
Juice of 1 lime
salt and pepperto taste
Toast the peanuts in a large pan over medium heat. You can toast them until some of them are slightly charred. Remove from the heat and let it cool.
Chop the peanuts really well in a food processor. You can also place them in a sealed bag and crush them with a rolling pin or thick glass bottle. Another option would be to blend the peanuts with the chicken broth in a blender.
In a medium bowl, mix the finely chopped peanuts, hot peppers, green onion, cilantro, tomato, chicken broth and lime juice. Season with salt and pepper to taste and serve.
