Gorditas de Azucar
On a recent trip to Mexico to visit my family, I was so blessed to be able to receive a warm welcome back, and equally heart warming, my tías and primas (aunts and female cousins) shared some family recipes with me. Gorditas de Azúcar were made in our house all the time. Unfortunately, was not able to ask my mom for her recipe before she passed, but now I have it and it will be a treasured recipe.

 

Ingredients:

2 cups flour
½ cup unsalted butter, margarine or shortening (at room temperature)
½ cup sugar
1 teaspoon salt
1 teaspoon baking powder
½ cup milk
1 egg, lightly whisked

 

Directions:

1. Combine the dry ingredients in a large bowl, add the shortening or margarine and work it in with your hands. Gradually add in the milk and egg until dough forms. Make 12 dough balls, set aside.

2. Heat a griddle pan or comal to medium heat. With a tortilla press or with a flat plate, take 1 dough ball and place between plastic, flatten to about 3½ inches in width. Cook on hot griddle for 1 or 2 minutes per side until nicely browned. Serve warm with butter and or dulce de leche.

Note: If the gorditas brown too quickly, turn the heat down. You want the middle to cook all the way through before it browned too fast.

A variation: use a light brown sugar or grated piloncillo instead of granulated sugar. Add some ground cinnamon and anise for extra flavor.
